Tiramisu-Style Espresso Granita Parfaits
So last night I was planning on making these, my first attempt was okay but they weren't very pretty. I ended up passing out before I could throw the second batch together. But in a sleepy haze, I remember Chris telling me that he had done them for me, and he even took pretty pictures.
Watcha Need:
1 cup sugar
3 cups espresso OR coffee
1 1/4 cups heavy cream (chilled)
1/2 cup mascarpone cheese (chilled)
1 teaspoon vanilla extract
Bite size Nilla wafers/ or regular ones crunched up
1/2 cup marsala wine or chocolate liqueur (not necessary, but why not?)
Dark chocolate, shaved
How to do it:
Wisk 3 cups of coffee with 3/4 cups sugar
Freeze in a 9x13 inch glass/ metal pan, stirring everything 30 minutes (it becomes a slushy like consistency)
While that is freezing, beat together the heavy cream, mascarpone cheese, the remaining 1/4 cup sugar, and vanilla until soft peaks form.
Once that granita (coffee slush) is done, layer everything together, finishing with shaved chocolate.
These are so good. They are a rich iced coffee. So yummy on a hot day!
So, while Buddy and I were doing what we do best, Chris put these together so I would have a post today!
He is so funny. Whenever I'm working on post, whether we go somewhere or we're cooking something, he always reminds me to take pictures. I love it! (and him)
