Looking for something easy for dinner tonight?
Why not make this! You could even throw it over pasta.. yum!
How to do it:
Cook 1 pound raw peeled and deveined medium or large shrimp in simmering salted water until opaque, 3 to 5 minutes; cool.
In a bowl, whisk together 3 tablespoons each lemon juice and olive oil, 1 tablespoon chopped capers, and ½ teaspoon honey; season with salt and pepper.
Toss with 8 cups spinach, 4 chopped plum tomatoes, 1 sliced avocado, and the shrimp.







That sounds really nice! I've been looking for some good recipes with capers.
