Homemade Paprika Fries:
Whatcha Need:
extra virgin olive oil

How to do it:
Preheat the oven to 150°C. Wash the potatoes with cold water. I prefer homemade fries unpeeled. So cut them into batons and coat with olive oil. Scatter the raw fries on a parchment paper lined baking tray. Bake them for around 20 minutes. After the half baking time turn over once. Remove them from the oven sprinkle well with salt and paprika.
Homemade mayonnaise
Whatcha Need:
1 fresh egg yolk
1 teaspoon mustard
400 g best extra virgin olive oil
juice from 1/2 lemon
2 teaspoons sour cream
How to do it:
Place egg yolk and mustard in a medium sized bowl and mix well together with an electric whisk. Drip oil slowly into the bowl while beating. Take care, at the beginning only in drops. The oil must first be mixed well with the egg before adding oil again. This process takes a a bit of time, maybe 5 or 6 minutes but it is worth one's while. As soon as a thick creamy mass arose stop whisking. Add sour cream and season to taste with lemon juice and salt. If you want you can add some paprika and garlic paste and you get the best homemade aioli.
