Orzo Salad
this concoction is a recipe of my own. so the recipe isn't
totally exact..and its flexible

This is one of my favorite recipes, its super easy and is the perfect lunch.
You can change it up by adding whatever you want

Whatcha Need:
1 Box (pound) Orzo
1 English Cucumber
1 Bottle Roasted Red Peppers
Pepperoni (either the presliced minis or you can cut your own)
Broccoli (as much as you want)
1 Ball Mozzarella Cheese (can be substituted with feta)
Powdered Ranch Dressing Mix (to taste)
Olive Oil (to taste)
Red Wine Vinegar (to taste)
How to do it:
Start boiling the water
(use a big pot..the orzo gets a lot bigger than you think!)

Add Orzo once you reach a rolling boil
While the orzo is cooking, I peel & dice the cucumber, cut the broccoli heads, slice the roasted reds into bite size pieces and cut up the mozzarella.
Once the Orzo are ready (I usually turn the heat off a little before they're done..they keep cooking in the bowl), fold in the broccoli (so they steam themselves), the cucumbers, the roasted reds and the pepperoni. Add the powdered ranch dressing (either 2 packets of a few shakes from the big container) and the olive oil and red wine vinegar (to taste).
Add the Mozzarella once the pasta has cooled

I'm not sure what Orzo is? Is it a mix between pasta and rice?
ReplyDeleteHey Jill! Yeah, its a really tiny pasta.. in the shape of rice! But it has more of the texture of pasta. Its uber yummy!
